Saigon chicken salad

This recipe used celery leaves. Who would have thought it? I mean, I've been throwing them out all this time but they're delicious.

I had to include a pic of the tossed salad too because you can't see it properly once it's been dressed in the bowl.

The chicken was cooked in a lemon juice marinade which gave the whole thing a real zing.
